Kale and Chorizo Soup

    In winter this hot soup with kale and chorizo sausage will warm up the soul! Great tastes for such a simple recipe.

    Serves: 8 

    • 1 kg potatoes, peeled
    • 1 large onion, sliced
    • 4 stock cubes
    • 10 cups (2 1/2 litres) water
    • salt and pepper, to taste
    • 4 bunches kale, thinly sliced
    • 1 large cooked chorizo sausage, thinly sliced

    1. Place potatoes, onion and stock cubes in the water then simmer until well cooked. Blend with a stick blender.
    2. Bring to a simmer and skim any foam. Taste and season with salt and pepper as needed.
    3. Stir in the kale and cook until just tender. Add the chorizo, stir and serve.
