Garlic Prawns with Rice

    This is a Cajun way to eat prawns - cooking in butter and spices and served with rice on the side. Also good with bread.

    Serves: 2 

    • 2 cups white rice
    • 120g unsalted butter
    • 1 teaspoon cayenne
    • 1 teaspoon black pepper
    • 1/2 teaspoon salt
    • 1/2 teaspoon chilli flakes
    • 1/2 teaspoon dried thyme
    • 24 large prawns, heads removed
    • 2 teaspoons minced garlic
    • 1 teaspoon Worcestershire sauce
    • 1/2 cup seafood stock
    • 1/4 cup beer

    1. Cook the rice in boiling water until nearly done. When there is about 5 minutes to go, make the prawns.
    2. In a large frypan, combine butter, cayenne, pepper, salt, chilli flakes, thyme, garlic and Worcestershire sauce over high heat. When butter has melted, add the prawns. Cook 2 minutes, shaking the frypan so the butter doesn't separate.
    3. Add stock and cook, shaking, 2 more minutes. Add beer and cook 1 more minute. Serve immediately with a mound of white rice and the sauce poured around.
