Tomato Soup with Meatballs

    Meatballs turn this simple tomato soup into a hearty main course! The secret ingredient is orange juice, try it.

    Serves: 6 

    • 3 tablespoons olive oil
    • 1 large onion, diced
    • 2 cloves garlic, minced
    • 2 tablespoons tomato paste
    • 2 tablespoons flour
    • 1 cup (250ml) vegetable stock
    • 1 cup (250ml) orange juice
    • 500g tinned diced tomatoes
    • 1 tablespoon mixed herbs
    • salt and freshly ground pepper, to taste
    • 1-2 tablespoons brown sugar

    • 300g beef mince
    • 1 egg
    • 2 tablespoons breadcrumbs

    1. Heat the olive oil in a saucepan and saute onion and garlic until translucent. Add tomato paste and flour and fry 2 minutes, stirring.
    2. Add stock, orange juice, diced tomatoes and mixed herbs. Simmer 10 minutes.
    3. To make the meatballs, combine the beef mince, egg and breadcrumbs, seasoned with a bit of salt and pepper. Form small meatballs with wet hands.
    4. Add meatballs to the soup and turn the temperature to low. Simmer 10-15 minutes, then season to taste with salt, pepper and sugar.
