Potato Soup with Bacon

    A very quickly prepared soup to warm up a cold winter evening. Bacon is simply sauteed and simmer with potatoes in cream and chicken stock.

    Serves: 6 

    • 6 rashers bacon, roughly diced
    • 4 cloves garlic, diced
    • 1 kg potatoes, peeled and diced
    • 1 cup chicken stock
    • 2 cups water
    • 1 cup cream
    • 3 tablespoons parsley, chopped

    1. Brown the bacon with the garlic in a heavy saucepan. Add potatoes, stock and water. Bring to a boil, reduce heat and simmer until potatoes are tender.
    2. Add cream and stir without boiling. Serve, garnished with a little parsley.
