Lamb and Green Bean Soup

    A delicious and hearty soup with lamb, beetroot, potatoes and green beans. Of course you can use your favourite vegetables.

    Serves: 6 

    • 300-400g boneless lamb
    • 8-10 small potatoes, sliced
    • 3-5 small beetroot, cubed
    • 2-3 small carrots, sliced
    • 150g green beans, sliced
    • 1 tomato, diced
    • 1 red capsicum, diced
    • salt and pepper, to taste
    • dill or coriander, to garnish
    • oil, for frying

    1. Boil the lamb in water until tender. Remove the lamb and dice. Add the potatoes to the cooking water and simmer.
    2. Lightly fry the beetroot and carrots and add to the soup. Lightly fry the green beans and tomato and add to the soup. Add the red capsicum. Simmer until vegetables are very tender.
    3. Season with salt and pepper and serve garnished with dill or coriander leaves.
