Crab Bisque

    This is a very refined soup which allows me to entertain without going to too much effort. I love to serve it on special occasions.

    Serves: 4 

    • 2 onions, diced
    • 2 carrots, diced
    • 2 stalks celery, diced
    • 2 tablespoons olive oil
    • 2 cloves garlic, diced
    • 1 tablespoon paprika
    • 2 tablespoons tarragon
    • cayenne pepper, to taste
    • 2 tablespoons tomato paste
    • 350g picked crabmeat
    • 30g flour
    • 1/2 cup white wine
    • 4 cups fish stock
    • 1 cup cream

    1. In a saucepan, saute the onions, carrot and celery in the olive oil for 3 minutes without browning. Add the garlic, paprika, tarragon, cayenne, tomato paste and crab meat.
    2. Sprinkle with flour and simmer five minutes, stirring. Add the wine and stock and simmer 20 more minutes. Puree with a hand blender. Gradually mix in the cream until smooth and serve immediately.
