    Nothing as hearty as a bowl of beef and barley soup, perfect in colder weather for lunch. You can also use leftover roast beef.

    Ingredients
    Serves: 6 

    • 6 cups stock
    • 1/2 cup pearl barley
    • 3 potatoes, peeled and diced
    • 1 carrot, diced
    • 1 onion, diced
    • 2 stalks celery, diced
    • salt and pepper, to taste
    • 2 bay leaves
    • 300g boiled beef

    Directions

    1. Bring the stock to a simmer. Add the barley and cook 35-40 minutes, until tender.
    2. Add the potatoes, carrot, onion and celery.
    3. Season with salt and pepper and the bay leaf. Add the beef and simmer about 15 minutes, until potatoes are tender.
