Chickpea Vegetable Soup

    A delicious vegetable soup with chickpeas, broccoli, sweet potato and carrots. The perfect thing for when you want to feel warm and healthy!

    Serves: 4 

    • 2 tablespoons olive oil
    • 1 small onion, diced
    • 6 vegetable stock (or water)
    • 2 carrots, grated
    • 1 sweet potato, peeled and cubed
    • 1 cup broccoli, chopped
    • 1 tin chickpeas, drained
    • salt and pepper, to taste
    • fresh herbs, to garnish

    1. In a saucepan, heat olive oil and fry onion 4-5 minutes until soft.
    2. Add remaining ingredients and simmer 15-20 minutes until vegetables are tender. Season with salt and pepper to taste. Serve sprinkled with fresh herbs like parsley or dill.
