Homemade Green Pea Soup

    Green pea soup with onion, carrots, potatoes and garlic. Very lovely and chunky. Use stock or water as you prefer.

    Serves: 6 

    • 3 cups shelled peas
    • 3 1/2 litres water or stock
    • butter, as needed
    • 1 onion, diced
    • 2 carrots, grated
    • 3 potatoes, peeled and cubed
    • 3 cloves garlic
    • 2 bay leaves
    • salt and pepper, to taste

    1. Place peas and water in a saucepan, bring to a boil, reduce heat and simmer 40 minutes.
    2. In a frying pan melt the butter, add the onions and fry until transparent. Add carrot and cook 10 minutes.
    3. Add the potatoes to the peas along with the onion and carrots. Add the garlic, bay leaf, salt and pepper. Simmer 20 minutes or until potatoes are done.
