Black Chickpea Soup

I had to make this when I found black chickpeas, but this simple and delicious soup is equally good with ordinary chickpeas.

Ingredients
Serves: 8
- extra virgin olive oil, as needed
- 1 clove garlic
- 1 sprig rosemary
- 400g dried black chickpeas (or regular chickpeas), soaked overnight
- 150g short pasta
- salt and pepper, to taste

- Heat a splash of olive oil in a saucepan and gently brown the clove of garlic with the rosemary sprig.
- Rinse the soaked chickpeas, add to the saucepan and cover with cold water. Bring to a boil, reduce heat and simmer 90 minutes.
- Add pasta and salt to taste then keep simmering until pasta is done.
- Serve, garnished with pepper and a drizzle of olive oil.
