Homemade Pea Soup

    Your basic pea soup, so simple but so good. You don't have to use bacon or ham, chicken or any cut of pork work equally well in the broth.

    Ingredients
    Serves: 6 

    • 300g chicken or pork
    • 8 cups water
    • 1 cup split peas
    • 1 onion, finely diced
    • 1 carrot, grated or diced
    • vegetable oil, for frying
    • 80g bacon, diced
    • 1 teaspoon coriander
    • 4-5 small potatoes, sliced
    • salt and pepper, to taste
    • 1 bay leaf

    1. Place the chicken or pork in a saucepan with 8 cups water. Bring to a boil and simmer 30 minutes. Rinse the split peas and add to the saucepan. Simmer another 30 minutes. Remove the meat and dice.
    2. Meanwhile, saute the onion and carrot in vegetable oil about 10 minutes. Fry the bacon separately.
    3. To the soup, add the coriander, onion, bacon and sliced potatoes. Add salt and pepper to taste and the bay leaf. Simmer 20 minutes until potatoes are tender. Serve.
