Minestrone in the Pressure Cooker

    The pressure cooker makes cooking delicious minestrone especially easy. You can use pretty much any vegetables you have in the fridge.

    Serves: 6 

    • 6 tablespoons olive oil
    • 1 onion, diced
    • 50g bacon, diced
    • 2 leeks, diced
    • 2 stalks celery, diced
    • 1 small cos lettuce, shredded
    • 2 large tomatoes, diced
    • 1 sprig fresh parsley, chopped
    • 3 large zucchini, sliced
    • 2 large handfuls green beans, sliced
    • 125g mushrooms, sliced
    • 6 cups water
    • 70g pasta of your choice
    • salt and pepper, to taste
    • grated Parmesan, to garnish
    • a few basil leaves, sliced

    1. Heat 3 tablespoons oil in a pressure cooker and saute the onion and bacon for a few minutes. Add leeks, celery, lettuce, tomatoes, parsley, zucchini, green beans and mushrooms. Stir well.
    2. Add 6 cups water and bring to the boil. Close the pressure cooker and when it reaches pressure lower the heat and cook 25 minutes.
    3. Release pressure, open the cooker and add pasta, salt and pepper and remaining olive oil. Stir well and cook 10 more minutes until pasta is tender.
    4. Serve sprinkled with Parmesan and fresh basil.
