Use any vegetables you like in this simple but tasty minestrone. Try celery, leek, beetroot, zucchini, cauliflower, cabbage or green beans.


Serves: 4 

  • 1 onion, diced
  • 50g butter
  • 300g mixed vegetables
  • 6 cups stock
  • salt and pepper, to taste
  • basil and oregano, to taste
  • 1 clove garlic, minced
  • 70g bacon, finely sliced
  • 50-100g macaroni
  • grated Parmesan, to garnish

Preparation:10min  ›  Cook:50min  ›  Ready in:1hour 

  1. Saute onion in butter until soft. Add vegetables and stock. Season with salt, pepper, basil and oregano and bring to a simmer.
  2. Add the garlic and bacon and simmer 30 minutes until the vegetables are nearly done.
  3. Add the macaroni and simmer 10 more minutes until al dente. Serve with Parmesan cheese to garnish.
