Bring the beans to boil in their soaking water. Then add the beef shank, bacon and calf's foot and pour over the extra water. Simmer about 45 minutes.
Heat the oil in a large saucepan and fry the onion and garlic until translucent. Add the remaining vegetables and cook until wilting. Add the beans, meat and their cooking water then bring to a simmer.
Add the herbs, salt and pepper. Simmer 30 minutes, then add the macaroni and simmer until done, about 20 more minutes.
Cut the meat into small pieces and discard the bones. Serve with grated Parmesan.
