Meaty Minestrone

    This is a variant of minestrone that is popular in Switzerland. Instead of being purely vegetables it has some flavourful cuts of meat for extra heartiness.

    Serves: 6 

    • 1 handful white beans, soaked overnight
    • 250g beef shank
    • 250g slab bacon
    • 1 piece calf's foot
    • 6-8 cups water
    • 2 tablespoons oil
    • 2 onions, diced
    • 2 cloves garlic, minced
    • 3 carrots, sliced
    • 2-3 leeks, sliced
    • 1 small cabbage, shredded
    • 2 turnips, cubed
    • 4-5 tomatoes, diced
    • 1 sprig rosemary
    • 1 sprig marjoram
    • 1 sprig parsley
    • basil leaves, to taste
    • salt and pepper, to taste
    • 1/2 cup macaroni
    • freshly grated Parmesan, to garnish

    1. Bring the beans to boil in their soaking water. Then add the beef shank, bacon and calf's foot and pour over the extra water. Simmer about 45 minutes.
    2. Heat the oil in a large saucepan and fry the onion and garlic until translucent. Add the remaining vegetables and cook until wilting. Add the beans, meat and their cooking water then bring to a simmer.
    3. Add the herbs, salt and pepper. Simmer 30 minutes, then add the macaroni and simmer until done, about 20 more minutes.
    4. Cut the meat into small pieces and discard the bones. Serve with grated Parmesan.
