Thai Coconut Soup with Prawns

    This is a delicate Thai style thick soup with coconut milk and prawns, tasty and exotic. I prefer to use large green prawns.

    Serves: 6 

    • 2 tablespoons olive oil
    • 1 onion, diced
    • 2 stalks celery, sliced
    • 1 cup fish stock
    • 1 tin (400ml) coconut milk
    • 1 tablespoon tomato paste
    • 1 cup milk
    • 1/4 cup flour
    • 500g prawns
    • salt and pepper, to taste
    • 1 teaspoon lime zest

    1. In a saucepan, heat the olive oil and fry the onion and celery.
    2. Add fish stock, coconut milk and tomato paste and bring to a simmer.
    3. Mix the milk with the flour until smooth, then stir into the simmering stock. Simmer 5 minutes.
    4. Add prawns, salt and pepper. Add lime zest and simmer 5 more minutes.
