Healthy, vegan, packed with protein and other good things, this delicious soup is perfect alone or with quinoa. Adjust the spices to your own taste.


Serves: 5 

  • 1 1/2 cups red lentils
  • 1 onion, finely diced
  • 2 cups water
  • 2 stalks celery, diced
  • 1 carrot, diced
  • 1 tin coconut milk
  • 240g tomatoes, diced
  • 3 pinches cinnamon
  • pinch cardamom
  • pinch ginger
  • pinch nutmeg
  • pinch turmeric
  • fresh coriander, chopped

Preparation:5min  ›  Cook:1hour  ›  Ready in:1hour5min 

  1. In a saucepan, combine lentils, onion, water, celery and carrot and bring to a simmer. Simmer 20 minutes.
  2. Add all remaining ingredients and simmer until the lentils are tender. Serve, sprinkled with coriander.
