A simple recipe for pork broth, which can be served as is with boiled potatoes for a warm winter soup or strained and used as the basis for other soups and sauces.
1 kg bone-in pork
7 allspice berries
4 black peppercorns
1 celery stalk
1 sprig parsley
1 teaspoon salt
1/4 teaspoon vegetable stock powder
- Place all ingredients except vegetables in a saucepan, cover with two litres water and simmer gently 1 hour.
- Remove the vegetables. Simmer the pork 1 more hour, until falling apart tender. Shred pork and discard bones. Peel and dice the vegetables and return to the saucepan.
- Cook the potatoes separately and serve with the broth.
