A simple recipe for pork broth, which can be served as is with boiled potatoes for a warm winter soup or strained and used as the basis for other soups and sauces.


Serves: 6 

  • 1 kg bone-in pork
  • 7 allspice berries
  • 4 black peppercorns
  • 1 leek
  • 1 celery stalk
  • 1 sprig parsley
  • 4 carrots
  • 1 teaspoon salt
  • 1/4 teaspoon vegetable stock powder
  • 500g potatoes

  1. Place all ingredients except vegetables in a saucepan, cover with two litres water and simmer gently 1 hour.
  2. Remove the vegetables. Simmer the pork 1 more hour, until falling apart tender. Shred pork and discard bones. Peel and dice the vegetables and return to the saucepan.
  3. Cook the potatoes separately and serve with the broth.
