Cucumber Chicken Soup

    My favourite Polish chicken soup which uses pickled cucumbers for a lovely note of sourness. Serve with a dill garnish.

    Serves: 8 

    • 4 chicken legs
    • 8 cups (2 litres) water
    • Vegeta(TM) stock powder, to taste
    • 1 sprig parsley
    • salt and pepper, to taste
    • 5 carrots, halved
    • 5 potatoes, diced
    • 1 small jar pickled cucumbers, grated
    • 2-4 tablespoons cream
    • 1 tablespoon fresh dill, to garnish

    1. In a large saucepan simmer chicken legs in water for 45 minutes, skimming any foam. Add stock powder, parsley, salt and pepper to taste.
    2. Add carrots and potatoes and simmer 10 minutes.
    3. Add grated pickled cucumber and simmer 10 minutes. Stir in cream and serve, garnished with dill.
