This is probably the ultimate winter vegetable soup. Cauliflower and carrot with hearty dumplings. Delicious and simple.


Serves: 4 

  • 4 cups (1 litre) chicken stock
  • 2 tablespoons butter
  • 1 onion, diced
  • 200g cauliflower, cut into florets
  • 2 cloves garlic
  • 1 carrot, sliced
  • salt and pepper, to taste
  • 1/2 cup warm water
  • 2 tablespoons butter, melted
  • 1 cup flour
  • 1 egg

  1. In a saucepan, bring the chicken stock to a simmer.
  2. In a frypan, melt two tablespoons butter and saute the onion until translucent. Add the cauliflower and garlic and cook a few more minutes.
  3. Add the onions and cauliflower to the stock with the carrot. Simmer about 15 minutes and season to taste.
  4. In a bowl, mix warm water, melted butter, a little salt, flour and egg. Mix until smooth. Using a teaspoon, add dumplings to the simmering soup and cook 5 minutes.
