This is a cold summer soup of red capsicum and baby prawns, ready in a few minutes plus chilling time.


Serves: 4 

  • 4 red capsicums, roughly diced
  • 100ml water
  • 120ml sour cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • hot chilli sauce, to taste
  • 350g prawns, peeled and cooked

Preparation:10min  ›  Extra time:1hour chilling  ›  Ready in:1hour10min 

  1. In a blender or food processor combine capsicums, water, sour cream, garlic powder and salt. Blend until very smooth. Season with chilli sauce.
  2. Chill at least 1 hour in the refrigerator. Just before serving stir in the prawns. Serve cold.
