Vanilla Slice Made Easy with Lattice Biscuits

    Serves: 6 

    • 2 packets Arnotts lattice biscuits
    • 600ml thickened cream
    • 1/2 cup icing sugar
    • 1 teaspoon vanilla
    • 1/2 cup custard powder
    • Icing:
    • 3 cups icing sugar
    • 1 tablespoon softened butter
    • 1 can passionfruit pulp or some fresh passionfruit

    1. Line a Swiss roll tin with baking paper.
    2. Place biscuits shiny side down into tin, cutting to fit if necessary. (You shouldn't need to cut if using a proper Swiss roll tin.)
    3. With an electric mixer, beat cream, icing sugar, vanilla and custard powder together until thick.
    4. Spread custard mix evenly over biscuits.
    5. Place the rest of the biscuits on top of the mixture, shiny side up. Set in fridge for approximately 2 hours.
    6. Icing:

    7. Mix icing sugar and butter together with enough passionfruit pulp to make a spreadable mix. Ice. Keep refrigerated.


    My icing never looks like passionfruit because I have to strain the pips out of the pulp or the kids won't eat it lol.
