Pork and Vegetable Stir Fry

    Serves: 2 

    • 150g pork, cut thinly into bite sized pieces
    • olive oil spray
    • 3 spring onions, sliced diagonally
    • 1 fresh red chilli, chopped
    • 100g celery, sliced diagonally
    • 150g carrots, cut into matchsticks
    • 100g broccoli florets
    • 50g green capsicum
    • 300g bean sprouts
    • 200ml stock
    • 2 tablespoons soy sauce

    1. Lightly spray a wok or large frying pan with olive oil and place on medium to high heat.
    2. Cook pork for 2 minutes.
    3. Add chilli and all vegetables except bean sprouts. Lower heat to medium and stir fry for 5 minutes.
    4. Add stock, cover pan with a lid and cook on a low heat for 5 minutes.
    5. Add bean sprouts, stir into other ingredients. Replace lid and cook for 2 minutes.
    6. Add soy sauce and stir through.


    To prevent bean sprouts becoming slimy, place them in a container lined with kitchen roll. Stored this way they will last up to 4 days.


    As there are a large amount of vegetables in this dish, you could chop them the previous night and keep them in the fridge. That way you can have this meal on the table in 15 minutes.
