BBQ Garlic Prawns

    Prawn and mushroom skewers are a classic dish that perfectly complement two flavours. Good as a snack or a main meal served with white rice.

    Makes: 8 skewers

    • 16 medium prawns, peeled and deveined
    • 200g mushrooms, thickly sliced
    • 2 cloves garlic, thinly sliced
    • 4 tablespoons extra virgin olive oil
    • juice of 1 lemon
    • salt and pepper, to taste
    • parsley, to garnish

    1. Place the prawns in a glass bowl with 2 tablespoons oil, half the garlic, salt, pepper and half the lemon juice and toss well. Cover with plastic wrap and chill 1 hour.
    2. Do the same with the mushrooms - in a bowl, toss with remaining half of ingredients and chill. Meanwhile, soak 8 small wooden skewers so they don't burn.
    3. Thread two prawns on each skewer, alternating with mushrooms. Keep the marinade.
    4. Preheat the barbecue to high. Cook the skewers 5 minutes a side, brushing with marinade. Serve, sprinkled with chopped parsley.
