Chocolate Cakes with a Liquid Centre

Individual chocolate cakes with a molten centre. These are best made in individual molds too for ease of serving, preferably silicon cupcake molds.


Serves: 8 

  • 2 egg yolks
  • 2 eggs
  • 100g sugar
  • 50g flour
  • 100g dark chocolate
  • 110g butter

Preparation:15min  ›  Cook:10min  ›  Ready in:25min 

  1. Preheat oven to 190 degrees C and butter large muffin tins.
  2. Beat the egg yolks, eggs, sugar and flour until smooth, using an electric beater.
  3. Melt the butter and chocolate together in a double boiler, stirring until smooth. Beat into the batter for 5 minutes.
  4. Pour batter into the muffin tins and bake 8-10 minutes. The centre of the cakes will be very liquidy and thus hot, so be careful. Let sit 2 minutes then carefully unmold onto plates. You can also serve them cold and the centres will be creamy.
