Molten Chocolate Cakes with a Surprise

Little individual chocolate cakes with a cherry centre. Note that I prefer to measure eggs by total weight rather than number of eggs, since eggs differ.


Serves: 8 

  • 250g dark chocolate, diced
  • 250g butter
  • 250g eggs
  • 120g sugar
  • 60g fine cake flour
  • 8 cherries, pitted

  1. Melt the chocolate with the butter in a double boiler.
  2. Beat the eggs with the sugar, then stir into the chocolate mixture. Add flour, stirring constantly.
  3. Pour batter into 8 buttered ramekins. Add a cherry to each and push down to the bottom. Place in the fridge for a few hours. When ready to cook, preheat oven to 220 degrees C.
  4. Bake 7-8 minutes. remove from oven and let stand 2 minutes. Unmold on individual plates and serve with a scoop of vanilla ice cream or a sprinkling of icing sugar.
