Just like a Swiss roll cake, a layer of sponge is rolled up with a chocolate filling. It's easy to do and looks great!


Makes: 1 cake

  • 130g caster sugar
  • 4 eggs, separated
  • 70g butter, melted
  • 110g flour
  • pinch salt
  • 100g chocolate, melted

  1. Preheat oven to 250 degrees C. Line a baking tray or Swiss roll pan with baking paper.
  2. Beat the sugar and egg yolks together until light. Stir in the melted butter and half the flour.
  3. Add the salt to the egg whites and beat until stiff. Fold in half the egg whites into the yolk mixture. Stir in the remaining flour then fold in the remaining yolks.
  4. Pour the batter over the baking paper to about 1cm thick then bake 8 minutes.
  5. Remove from the oven and immediately invert onto a damp tea towel. Spread over the melted chocolate and, using the tea towel, roll up the cake lengthwise. Let cool before slicing and serving.
