This little number gives you the combined taste of chicken mainly with a little pork sausage mince, which the next day can be used for lunches as the stuffing forms into a meatloaf, good on its own or for a sandwich.
Place sausage mince in a mixing bowl. Use as much as you think you will need, depending on the size of the chook.
Add bacon pieces, diced onion, mushrooms and capsicum. Add garlic to taste, your choice of spices and a little apricot jam. Mix well.
Stuff the chook, tie the legs and roast in the oven as usual. When it comes out you have a lovely tasting chook with a nice stuffing and leftovers for the next day.
