Creamy Risotto with Smoked Salmon

    Here is the recipe for smoked salmon risotto that has a delicate flavor, presented in the appropriate manner can be a great first course for a romantic dinner, Mother's Day or Valentine's Day.

    Serves: 2 

    • 1 small shallot
    • 30g butter
    • 1/2 cup dry white wine
    • 140g risotto rice
    • 500ml vegetable stock, hot
    • 80g smoked salmon, sliced into strips
    • 100g soft cheese, such as Brie or Camembert
    • salt, to taste
    • cracked pink peppercorns, to taste

    1. Finely dice the shallots then saute in an saucepan with butter, adding a few drops of white wine if required.
    2. Add rice then deglaze with the wine. Cook while adding the hot stock a little at a time.
    3. When the rice is cooked, add the salmon and diced soft cheese, stirring well to combine the ingredients. Add the salt, to taste.
    4. Sprinkle with cracked pink peppercorns.
