Chocolate Glazed Donuts

    What fun to make your own donuts as good as any you can get at the shops! Decorate with sprinkles if you like.

    Makes: 24 donuts

    • 200ml milk
    • 70g icing sugar
    • pinch salt
    • 500g sifted flour, divided
    • 1 packet dry yeast
    • 50ml warm water
    • pinch icing sugar
    • 75g butter, melted
    • 2 eggs, beaten
    • oil, for deep frying
    • Glaze
    • 200g cooking chocolate
    • 1 tablespoon water

    1. Bring the milk to a simmer then pour into a bowl with the 70g icing sugar and salt. Add half the flour and beat well.
    2. In a small bowl, dissolve yeast in warm water with a pinch of icing sugar and let stand 5 minutes until foamy. Stir into the milk/flour mixture with the butter and beaten eggs.
    3. Gradually mix in the remaining flour. Place dough on a floured surface and knead 3-4 minutes. Place in an oiled bowl, cover and let rise 30-45 minutes, or until doubled in volume.
    4. On a lightly floured surface, roll the dough out to 1cm thick. Cut the dough with a round cookie cutter or a cup, then let doughnuts rise another 30-40 minutes.
    5. Heat about 5cm oil in a deep fryer. Fry the doughnuts a few minutes or until golden on both sides. Place on paper towels to drain.
    6. To make the chocolate glaze, melt the chocolate and water in the microwave. Stir until smooth then dip the still warm donuts in the glaze. Let cool until glaze has hardened.
