Marble Cake with Chocolate Glaze

    Mayonnaise adds a very unique consistency to a cake! This cake is even better kept overnight in the refrigerator.

    Makes: 1 cake

    • Cake
    • 4 eggs
    • 150g sugar
    • 240g flour
    • 2 teaspoon baking powder
    • 180ml mayonnaise
    • 2 drops vanilla extract
    • 1 tablespoon cocoa powder
    • Glaze
    • 50g butter
    • 5 tablespoons caster sugar
    • 3 tablespoons water
    • 4 tablespoons cocoa powder

    1. Preheat oven to 180 degrees C. Grease a medium cake tin and dust with flour.
    2. Beat the eggs and sugar over a water bath until sugar has dissolved.
    3. Combine flour and baking powder in a large bowl and stir in the egg-sugar mixture. Add mayonnaise and vanilla and mix to form a smooth batter.
    4. Place 2/3 of the batter in the cake tin and smooth the top. Mix the rest of the batter with the cocoa powder and distribute over the top of the cake. Stir slightly with a fork for a marbling effect.
    5. Bake 30 minutes or until a skewer comes out clean. Let cool on a wire rack for 15 minutes.

    7. In a small saucepan, combine butter, sugar, water and cocoa powder. Heat over medium heat until butter has melted. Stir with a whisk until smooth.
    8. Coat the cake with the glaze and let cool at least 15 minutes or until glaze hardens. Store in the fridge.
