Buttermilk Chocolate Chip Muffins

    Who doesn't love chocolate chip muffins? This is a fast and easy recipe with good results. Take care not to overmix the batter.

    Makes: 12 muffins

    • 200g flour
    • 100g sugar
    • pinch salt
    • 3 teaspoons baking powder
    • 180g chocolate chips
    • 60g butter, melted
    • 1 medium egg
    • 160ml buttermilk
    • 1/2 teaspoon lemon zest

    1. Preheat oven to 180 degrees C and grease a muffin tin.
    2. In a large bowl, combine flour, sugar, salt, baking powder and chocolate chips.
    3. In a separate bowl, beat butter, egg, buttermilk and zest. Beat until smooth and a little frothy.
    4. Add the flour to the wet ingredients and mix until just incorporated. Fill the muffin cups 2/3 full. Bake 30 minutes or until golden.
