Russian Easter Cheese

    A traditional Russian Easter cheese spread, usually made in a triangular mold. Sweet, custardy and delicious!

    Serves: 12 

    • 500g cottage cheese
    • 100g butter, softened
    • 3 eggs
    • 1/2 cup sugar
    • 1 cup light thickened cream
    • 100g raisins
    • zest of 1 lemon
    • 1 teaspoon vanilla extract

    1. Place the cottage cheese in a sieve and let drain 1/2 hour.
    2. In a mixing bowl, combine drained cheese with softened butter.
    3. Beat together eggs, sugar and cream and place in a small saucepan. Cook over low heat, stirring constantly, until mixture thickens. Remove from heat and cool slightly.
    4. Add the custard to the cottage cheese. Add the raisins, zest and vanilla and mix well, until smooth.
    5. Line your mold (ramekins or special mold) with cheesecloth and spoon in the cheese mixture. Fold over the edges of the cheesecloth and press to flatten.
    6. Refrigerate overnight. Before serving, invert on a plate and remove cheesecloth. Bon appetit!
