Easter Bunny Cookies

    Fun and easy cookies to make at Easter with a chocolate coating. I like to use both dark and white chocolate.

    Makes: 20 cookies

    • 375g flour
    • 225g softened butter
    • 175g sugar
    • 2 eggs
    • flour, for rolling
    • dark or white chocolate, to decorate

    1. Beat the flour, butter, sugar and eggs together to form a dough. Chill dough 1 hour in the fridge.
    2. Preheat oven to 200 degrees C and line a baking tray with baking paper.
    3. Roll the dough out on a floured surface to about 5mm thick. Cut out with bunny-shaped cutter. Place on the baking paper and bake 12-15 minutes but don't let them get too dark.
    4. Melt the chocolate and brush onto the biscuits.
