Easter Lamb Cake

    Lamb cakes are an Easter tradition, easy to make and very cute! You will need a lamb cake mold, which you can order.

    Makes: 1 cake

    • 250g butter, room temperature
    • 250g sugar
    • 1 teaspoon vanilla sugar
    • 4 eggs
    • pinch salt
    • zest of 1 lemon
    • 150g flour
    • 150g cornflour
    • 1 teaspoon baking powder
    • 1 tablespoon rum or lemon juice
    • icing sugar, for dusting

    1. Butter the lamb cake mold well and preheat the oven to 180 degrees C.
    2. Beat the butter until fluffy. Stir in the sugar and vanilla sugar. Beat in the eggs one by one, then add salt and lemon zest.
    3. Combine the flour, cornflour and baking powder and gradually mix into the batter. Do not over mix. Finally stir in the rum or lemon juice.
    4. Bake about 50 minutes then allow to cool before unmolding. Carefully remove from the mold and sprinkle with icing sugar.
