Easter Flower Cupcakes

    If part of your Easter includes decorating cupcakes, you have to try these delightful and easy flowers. Also good for Mother's Day.

    Makes: 8 cupcakes

    • Cupcakes
    • 90g butter, softened
    • 80g sugar
    • 1 teaspoon vanilla sugar
    • 2 small eggs
    • 1 teaspoon vanilla essence
    • 90g flour
    • 1 teaspoon baking powder
    • pinch salt
    • Frosting
    • 50g butter
    • 1/2 teaspoon vanilla essence
    • 50g cream cheese
    • 125g icing sugar, or as needed
    • Decoration
    • 8 marshmallows
    • coloured sugar sprinkles
    • 8 chocolate buttons

    1. Preheat oven to 180 degrees C. Line an 8-cup cupcake tin with patty cups.
    2. Cream the butter, sugar and vanilla sugar with an electric mixer. Beat in eggs one at a time, then add vanilla essence and beat until smooth.
    3. While beating, gradually add the flour, baking powder and salt. Beat 5 minutes, then pour the batter into the cups.
    4. Bake 14 minutes or until a skewer comes out clean. Allow to cool on a wire rack 30 minutes.
    5. For the frosting, mix together the butter, vanilla essence and cream cheese, then gradually beat in the icing sugar.
    6. Slice each marshmallow into 5 disks and press one side of each disk in the coloured sugar.
    7. Spread the frosting over the top of each cupcake, then arrange 5 marshmallow slices on each to make a flower. Place a chocolate button in the middle.
