German Easter Pastries

    These delicious pastries are a must at Easter. They are filled with a mixture of cottage cheese and ground hazelnuts and twisted.

    Makes: 15 pastries

    • Filling
    • 100g ground hazelnuts
    • 70g sugar
    • 1 tablespoon rum
    • 1 tablespoon milk
    • Dough
    • 200g flour
    • 1 teaspoon baking powder
    • 170g cold butter, finely diced
    • pinch salt
    • 1 teaspoon vanilla sugar
    • 200g cottage cheese or quark cheese
    • 1 egg yolk

    1. Preheat oven to 200 degrees C and line a baking tray with baking paper.
    2. Combine all the filling ingredients in a bowl, mix well and set aside.
    3. In a separate bowl, sift together the flour and baking powder. Rub in the butter. Add salt, vanilla sugar and cottage cheese. Knead into a smooth dough.
    4. Roll out dough into a long thin rectangle, about 6cm wide. Spread the filling on the lower half, then fold over the top half.
    5. Slice into 3cm wide strips and twist the strips. Brush with beaten egg yolk, place on the baking tray and bake 10-12 minutes until golden.
