Deep Fried Milk

    Deep fried milk is a clever Chinese dessert, where thickened milk is dipped in a beer batter and deep fried. Delicious and surprising!

    Serves: 2 

    • 500ml thickened cream
    • 100g cornflour
    • 100ml condensed milk
    • 1 cup flour
    • 1 cup polenta
    • 1 teaspoon baking powder
    • pinch salt
    • beer, as needed
    • vegetable oil, for frying

    1. In a saucepan combine cream, cornflour and condensed milk. Bring to a simmer, stirring constantly. Remove from heat and pour into a non-stick baking pan. Cover well with plastic and chill 2 hours.
    2. Make the batter: combine flour, polenta, baking powder, salt and enough beer to make a thick batter.
    3. Dice up the set milk mixture into cubes, dip in the batter and deep fry until golden brown.
