Mango Sago Cream

    If you can't find pomelo, grapefruit is an adequate substitute for this dainty, classy fruit dessert. Perfect for dinner parties.

    Serves: 6 

    • 25g sago
    • 100g fresh mango, peeled and diced
    • 1/8 pomelo, peeled and diced
    • 2 tablespoons sugar
    • 100ml hot water
    • 50ml sweetened coconut milk

    1. Rinse the sago then simmer in boiling water 5 minutes. Cover and let sit 5 minutes off the heat until translucent. Drain and set aside.
    2. Stir the sugar into the hot water until dissolved. Place in a blender with 80g of the mango and puree. Chill 20 minutes.
    3. Add the sago and 1/2 the pomelo to the mango puree and mix well. Spoon into 6 shot classes, then top with coconut milk and remaining mango and pomelo. Serve!
