Homemade Pumpkin Pasta Dough

    There are so many beautifully coloured pastas out there, one of my favourites is the bright yellow/orange of pumpkin pasta, best thing it is super easy to make!

    Serves: 4 

    • 2 cups plain flour
    • 1/4 teaspoon sea salt
    • 1 egg and 2 egg yolks
    • 3 tablespoons pumpkin puree
    • water, as required

    1. Add the flour and salt to a food processor then pulse to combine. Add the egg yolks, whole egg, and pumpkin puree. Pulse until well combined. Drizzle in the water until a dough forms.
    2. Form the dough into a bowl and sprinkle the outside with flour so it doesn't stick then wrap in plastic wrap.
    3. Cut the pasta dough into thirds and begin rolling out into a loose rectangle, sprinkling on only as much flour as it takes to keep it from sticking.
    4. Once the dough is nearly paper thin, cut it into any shape you want. You can use a knife or a pizza cutter, fettuccinni or pappardelle work well. Cover until needed.
    5. Bring a large saucepan of water to the boil with a generous amount of salt added. When ready add the pasta to the boiling water, it should only take a few minutes to cook.
    6. Drain and serve with your desired sauce.
