Steamed Spinach Dumplings

    Try making your own dumplings - it's easy! Though if you don't feel like making the dough you can use premade wonton wrappers.

    Serves: 2 

    • Dumpling wrappers
    • 250g flour
    • 75ml boiling water
    • 75ml cold water
    • Dumpling filling
    • 1 tablespoon tiny dried prawns
    • handful rice noodles (vemicelli)
    • 2 eggs
    • 250g spinach, rinsed and chopped
    • 3 mushrooms, finely diced
    • a little parsley, chopped
    • salt, sugar, pepper and sesame oil, to taste

    1. First make the filling: soak the dried prawns and rice noodles in warm water until soft, then finely mince.
    2. Beat the eggs and fry in a nonstick frypan until dry-scrambled.
    3. In a bowl, combine prawns, spinach, noodles, mushrooms, eggs and parsley with salt, sugar, pepper and sesame oil to taste. Set aside.
    4. Make the wrappers: in a bowl combine flour and boiling water and stir well with chopsticks. Gradually add cold water while stirring, to make a dough.
    5. Knead the dough by hand until smooth then cover with plastic wrap and let rest 20 minutes. Knead again and roll into a long sausage. Cut into small balls.
    6. Roll out the balls to make round wrappers about 6cm across. Place a teaspoon of filling on each wrapper and fold in half to seal.
    7. Cook the dumplings in a steamer about 5 minutes, in batches if necessary.
