It was a bit odd when I first heard of putting lemonade in a scone recipe but this pumpkin version works out really well. Hope you like it as much as I do.
The end result was fine but I found that the dough mix was way too sticky to work with. I had to add at least another 1/2 cup of flour. In saying that, my pumpkin mash/puree may have been too watery and may have affected the consistency. What I expected to be a simple & hassle free recipe didnt quite work out that way. I WILL be giving this a second go though because they are light & fluffy and the family devoured them 😆 - 20 May 2016
