Pumpkin Lemonade Scones

    It was a bit odd when I first heard of putting lemonade in a scone recipe but this pumpkin version works out really well. Hope you like it as much as I do.

    Serves: 6 

    • 2 1/2 cups self raising flour
    • pinch salt
    • 1 cup pumpkin puree, or mash pumpkin
    • 1/2 cup cream
    • 1/2 cup lemonade
    • 1 tbsp milk

    1. Preheat oven to 230 degrees C. Lightly dust a baking tray with flour.
    2. Sift the flour and salt into a large bowl. In a small bowl whisk the pumpkin and cream until smooth.
    3. To the flour add the lemonade and pumpkin mixture. Stir with a butter knife until a sticky dough forms.
    4. Turn onto a lightly floured surface and knead gently until a smooth, soft dough. Press the dough out until 2cm thick. Cut the dough as desired. Gently knead the scraps and repeat to make more scones.
    5. Place the scones side by side and just touching, on the prepared tray. Lightly brush with milk. Bake for 12-15 minutes or until golden. Serve warm.

    The end result was fine but I found that the dough mix was way too sticky to work with. I had to add at least another 1/2 cup of flour. In saying that, my pumpkin mash/puree may have been too watery and may have affected the consistency. What I expected to be a simple & hassle free recipe didnt quite work out that way. I WILL be giving this a second go though because they are light & fluffy and the family devoured them 😆  -  20 May 2016
