Vegetable Miso Soup

    This is a simple meal for one, super healthy and fat free. Vegetables are simmered and served with a miso broth while still crunchy.

    Serves: 1 

    • 2 turnips, peeled and quartered
    • 1 carrot, sliced
    • 1 small head broccoli, cut into florets
    • 1 zucchini, cut into chunks
    • handful green beans, halved
    • 2 cups water
    • 1 stock cube
    • 2 tablespoons miso paste, or to taste

    1. Put a saucepan of water on to boil. Add turnips and simmer 5 minutes. Add carrot and simmer 5 more minutes. Add broccoli, zucchini and beans and simmer 2 minutes. Strain out the vegetables.
    2. In a separate saucepan boil the 2 cups water with the stock cube. Add the miso and taste, adding more if necessary. Put the vegetables in a large bowl and pour over the miso soup.
