Indian Chicken Stock

If you are making a curry or biryani with chicken stock, try using this stock instead. It is delightful and fragrant.

Ingredients
Makes: 6 cups stock
- 1 chicken carcass (neck, back, bones, wingtips etc)
- water, as needed
- salt, to taste
- 2 cinnamon sticks
- 4 cardamom pods, smashed

- Combine all ingredients in a saucepan, adding water to cover.
- Bring to the boil and simmer, uncovered, 45 minutes. Strain the stock.
