Miso soup is a fantastic appetiser and so easy to make. It's best with dashi stock, which you can easily make with instant dashi granules.
3 cups dashi or other soup stock
1/3 cup white miso paste
pinch MSG, optional
1/2 cup fresh mushrooms, thinly sliced
2-3 tablespoons sliced spring onions
- Pour the dashi into a saucepan and add miso paste, stirring until smooth. Taste and add more miso paste if it is not strong enough.
- When about to serve, add the MSG if using and the mushrooms. Bring to the boil and pour immediately into 3 bowls. Garnish each bowl with sliced spring onions.
