    Fennel is a subtle and delicious vegetable that is very well suited to a cream soup. This can be served hot or cold, summer or winter.

    Serves: 3 

    • 2 large fennel bulbs, diced
    • 1 onion, diced
    • 4 tablespoons oil
    • 2 cups chicken stock
    • 300ml light thickened cream
    • salt and pepper, to taste

    1. In a saucepan over medium heat, saute the fennel and onion in the oil for 10 minutes. Add the chicken stock and bring to a simmer.
    2. Blend the soup with a stick blender then add cream and season with salt and pepper. You can serve the soup hot, or chill for two hours and serve cold.
