Stock from Chicken Wings

Chicken wings are cheap and make wonderful chicken stock. You can just drink this as is for a clear chicken soup or use it in other recipes. Great if you have a cold.

Ingredients
Serves: 6
- 5 whole chicken wings
- 8 cups (2 litres) cold water
- 1 carrot, peeled
- 1/4 onion, peeled
- 3 cloves garlic, peeled
- 3 sprigs parsley
- salt, to taste

- Place the wings in a saucepan with the cold water and bring to a simmer. Simmer and skim foam until foam no longer rises.
- Add the carrot, onion, garlic and parsley. Reduce heat to a minimum and simmer 2 hours. Add salt to taste.
- Strain stock through a sieve or cheesecloth and discard solids. Store in the freezer until needed.
