    A delicate creamy salmon chowder. If you don't fancy salmon other fish such as whitefish or cod works well too.

    Ingredients
    Serves: 4 

    • 2 tomatoes
    • splash vegetable oil
    • 1 onion, finely diced
    • 1 carrot, grated
    • 300g salmon fillets (or other fish of your choice)
    • 4 cups water
    • 4 potatoes, peeled and cubed
    • salt and pepper, to taste
    • 2 cups cream

    Directions

    1. Pour boiling water over the tomatoes to make them easier to peel. Peel and dice tomatoes.
    2. In a saucepan, heat the vegetable oil and add the onion. Fry a few minutes until transparent. Add the carrot and cook a few minutes more. Add the fish, fry for a minute then add the tomatoes.
    3. Add water and bring to a simmer then add potatoes. Season with salt and pepper to taste and cook about 10 minutes, until potatoes are tender.
    4. Add cream and bring to a simmer. Serve!
