Salmon and Caper Chowder

    Salmon and capers are a perfect combination. This is a simple chowder to make, great for an easy lunch. You can use tinned salmon if you can't find fresh.

    Serves: 4 

    • 2 tablespoons butter
    • 1 onion, finely diced
    • 1 carrot, finely diced
    • 300g salmon fillet, diced
    • 2 tablespoons flour
    • 1 cup (250ml) milk
    • 4 cups (1 litre) water
    • 500g potatoes, diced
    • salt and pepper, to taste
    • pinch paprika
    • capers, to garnish

    1. Melt the butter in a saucepan and fry the onion and carrots for five minutes, stirring.
    2. Add the salmon and flour and fry another five minutes, stirring. Add milk, bring to a simmer then add the water.
    3. Add the potatoes, salt, pepper and paprika. Simmer 15 minutes or until potatoes are done.
    4. Serve in four bowls, with a sprinkling of capers to garnish.
