Tinned salmon is great for making a quick and easy chowder. This is a very easy lunch for two, best with some toasted bread.


Serves: 2 

  • 3 potatoes
  • 1 carrot, grated
  • 1 tablespoon butter
  • 1 tin pink salmon
  • 1 bunch dill
  • 200ml cream or milk
  • salt and pepper, to taste

  1. Boil the potatoes in minimal water until they are tender and there is only 3cm water left in the saucepan. Meanwhile, fry the grated carrot in butter until soft.
  2. In a blender, combine the potatoes and cooking water, salmon, dill and milk. Blend to a puree - if too thick, add more milk or cream.
  3. Pour the soup back into the saucepan and reheat, adding salt and pepper to taste. Finally, stir through the carrots and serve.
